How to Cook with Honey

Rules for Substituting Honey for Sugar
You will use less honey than sugar.
When swapping honey, use this rule of thumb…. for every cup of sugar in a recipe, substitute 2/3 of a cup of honey.
Reduce the Liquids
Honey is about 18 percent water, which means you’ll also want to reduce the total amount of liquids in the recipe to counter the extra liquid from the honey. Reduce the liquid by about a quarter.
Lower the Baking Temperature
The higher sugar content in honey means it may caramelize; therefore, things may darken faster than granulated sugar. To ensure that whatever you’re baking doesn’t brown too quickly, lower the heat by 25 degrees and check on it every so often.
